During one of our weekly meetings, a food caterer brought sample of dishes that might be part of our Christmas Party menu. One is the Lo Han Chai.

"The dish is traditionally enjoyed by Buddhist monks who are vegetarians, but it has also grown in popularity throughout the world as a common dish available as a vegetarian option in Chinese restaurants. The dish consists of various vegetables and other vegetarian ingredients (sometimes with the addition of seafood or eggs), which are cooked in soy sauce-based liquid with other seasonings until tender. For more than three decades, McDonald’s has been the Filipino family’s first choice when it comes to sharing great tasting meals and creating memorable moments with one another. Chicken nuggets or Chicken loaf?

Thinking of ways to cook chicken that your kids will surely love? Here’s one. I don’t know what to call this, chicken nuggets or chicken loaf since it looks like both.

You will need:

½ kilo chicken breast, bones removed

1 medium sized carrot, shredded

1 cup all-purpose flour

1-2 tbsp baking powder

2 pieces eggs

1 tsp salt

1 tsp ground pepper

Palitaw

Palitaw means “to get float”. Ths Filipino snack is simply named from it since cooking this is simply by placing the mixture in boiling water and wait until it floats.

You will need:

½ kilo glutinous rice flour

I remember that one of the symbol of my Alma Mater is the palay or we referred to as "Golden Grain". Actually, our year book is named after it.

Being humble is like a grain of rice that bows towards the ground as it gain weight.
