Sarciado with a Twist

Sarciado With a Twist
A recipe of Fish Sarciado was already posted here. One day Mommy recommends to put some twist out of curiosity. She suggests to use alamang or shrimp paste instead of salt or patis. To make it even healthier, I added malunggay leaves.
You will need:
1 medium-sized bangus or any fish you want, fried
4-5 medium-sized tomatoes, chopped
1 medium-sized onion, minced
4 cloves garlic, minced
Thumb-sized ginger, minced
2-3 tbsps tomato paste
2 tbsp alamang (shrimp paste)
2 eggs, slightly beaten
2 cups malunggay leaves

Here’s how to do it:
Sauté onion, garlic, ginger. Add totamoes and shrimp paste and continue sautéing until tomatoes are cooked. Add 1 cup of water and tomato paste. Let it simmer for a minute. Add eggs with continue stirring. Bring back the fish and malunggay leaves and let it simmer for another minute or until malunggay leaves are cooked.
