Chocolate Crinkles


I already baked chocolate crinkles using an oven toaster and Celebrations By Sharon Choco Crinkle Cookie Mix and it goes well.

Since I got my oven, I have been trying to get a “perfect” combination from scratch that will suit my taste bud or, at least, taste like the ready-made mixture.


Though there are many recipes available on the internet, I keep on trying and doing some modifications to get the best batter mixture as well as the process of baking including the temperature and time.


 After several trial, here is what I got. This can be a nice giveaway for St. Patrick’s Day.


CHOCOLATE CRINKLES

Ingredients:
125 grams Dutché Premium Dark Chocolate Bar
¾ cup butter
1 cup granulated sugar
1 cup brown sugar


4 medium eggs
2 ¾ cups All-purpose flour sifted
¼ cups cocoa powder
2 tsp baking powder
1 tsp salt
1 tsp instant coffee
Confectioner’s sugar

Direction:
Melt butter and chocolate bar in a double boiler.
Add brown and white sugar until melted.
Add egg one at a time. Set aside.

In a separate bowl, mix all-purpose flour, cocoa powder, salt, instant coffee until well-blended.

Add flour mixture to the chocolate mixture and mix until no more lumps.
Refrigerate for at least 6 hours.

Pre-heat oven to 150ÂșC.

Form about 1-2 inches balls of the refrigerated batter and roll in powdered sugar.
Place on baking sheets lined with wax paper with about 2 inches apart.
Baked for about 15 minutes or until surface cracks.
Cool on a wire rack.

Wanted Comfortable Shoes!


Women love shoes. Agree? Two hands up pa, haha. Well, when buying shoes I always go for comfortable shoes. I go to work everyday and having comfortable shoes is a must. But the shoes must be durable too because I work inside a plant. Dusty kasi and pathways are sometimes wet.

Let me share some of my daily work shoes.

Those shoes are good buys talaga. I get the best value for my money because aside from being comfortable, these are durable and very affordable pa. Would you believe those shoes are below 500 pesos lang per pair?

I am a practical mom. When buying things, I always consider the quality, price and last is the brand name. There are brands naman that are less expensive but of good quality.

Going back to shoes, I am in search of nice and again comfortable shoes. This time sneakers naman. Good thing I find all around footwear from Keds available at ZALORA!

Pan-Grilled Liempo with Buttered Vegetable


Last February 14, instead of having a date outside Mommy and I celebrated the heart’s day at home. See Mommy’s post on how our Valentine's Day was.

Mommy prepared our lunch. We had grilled liempo with buttered vegetable. Instead of grilling the pork liempo over charcoal, it is cooked using Happy Call Double Pan Grill. The pork liempo turned tender even the skin is very soft and tender in every bite.


Beans, carrot and Jolly Whole Corn Kernel

For the buttered vegetable, Mommy used Jolly Whole Corn Kernel. What I like with this brand is that it has a crunchy and natural sweet corn kernel taste. Unlike other brands I used, the corn kernels did not shrink as it is cooked.

PAN-GRILLED LIEMPO WITH BUTTERED VEGETABLE


Ingredients:
For the grilled liempo:
½ kilo pork liempo
1 cup soy sauce
½ cup brown sugar
1 tbsp ground pepper
4 cloves garlic, minced

For the buttered vegetables:

1 can Jolly Whole Corn Kernel, drained
1 cup diced carrots
1 cup beans, chopped to about half inch long
2 tbsp butter or margarine
1 tsp cooking oil

Directions:

For the grilled liempo:
Marinate pork liempo for at least 30 minutes in soy sauce, brown sugar, ground pepper and garlic.
Over low heat, grill liempo using a happy call double pan grill.
Brush using the marinade every time the pork is turned.
Continue grilling for about 15-30 minutes.

For the buttered vegetable:

Melt butter in cooking oil to prevent immediate burning of butter.
Saute vegetables until cooked.

Serve the grilled liempo and buttered vegetables with steam or fried rice.
