Pooqui-pooqui with Ensaldang Repolyo |
I don’t
know if I have to consider the title of this post explicit or not. But the name of this dish really exists in Ilocos Region. I saw this recipe from Chef Boy
Logro’s “Idol sa Kusina”.
Ingredients: Grilled Eggplant, tomatoes, onions and eggs |
You will
need:
4 pcs
eggplant, long variety, grilled, peeled and chopped
4 pcs
tomatoes, chopped
1 medium
sized onion, chopped
3 pcs egg,
beaten
Salt and
pepper to taste
Here’s how
to do it:
Saute onion
and tomatoes then add the eggplant. Pour beaten egg and keep on stirring
until egg is cooked. Add salt and pepper to taste.
Serve with
either steamed or fried rice.

ReplyDeleteJust this evening, we had a similar version of the veggie, together with chicken tandouri (oops, I'm not sure of the spelling). And nakakagana lalo na if you eat with sili!
