Since our little Matt is already in school and as
parents, we are thinking on how make his snacks at school healthy and be sure
that he will really love it. This is one of the reasons why Mommy allowed me to
have a baking oven at home.
Instead of buying ready-made biscuits, cupcakes and
other baked products, I made some two Sundays ago (late post due to very busy workload) and Matt loves
the finished product. Hindi nga umabot ng one week. Aside from school baon,
meryenda din sa bahay. Next time to make it more appealing, I will make
different shapes.
Oatmeal-Raisins-Chocolate Chips Cookies |
OATMEAL-RAISINS-CHOCOLATE CHIPS COOKIES
You will need:
1 cup raisins, soaked for 30 minutes in water, drain
1 cup chocolate chips
1 cup all-purpose flour, sifted
2 ½ cups quick cooking oatmeal
½ cup sugar
1 tbsp baking powder
1 tbsp baking soda
½ cup butter
2 pcs eggs
1 tbsp vanilla extract
1 tsp cinnamon powder (optional)
Here’s how to do it:
Preheat the oven to 175ÂșC.
Soften butter using mixer then add sugar and egg (one at a time). Add
flour, baking powder, baking soda, vanilla extract and cinnamon powder. Pour in
oatmeal and mix until well blended. Add raisins and chocolate chips and fold.
Scoop about a tablespoon of the mixture, form into balls then flatten.
Put in a greased baking pan (other option: line the pan with cookie sheets).
Baked for about 10-15 minutes or until golden brown. Remove from oven and cool
before removing from pan.
Tip/s:
You can use dark brown sugar to add more color on your finished product.
If you want to make your cookies chewy inside, lessen the cooking time.

I will tell my daughter about your recipe. She wants to make chocolate chip cookies and this is even better and healthier because of the added oats. I remember doing something like this years ago but haven't had much time to bake lately.
