Chicken and Potato Salad

Looking for a healthy and complete meal? You may try this one – Chicken and Potato Salad.

This dish can be considered an all-in-one meal for it has the carbs (potato), protein (chicken) and fiber (vegetables).
Chicken and Potato Salad

CHICKEN AND POTATO SALAD
You will need:
250 grams breast fillet
300-400 grams marble potatoes, boiled half-cooked, peeled and cut into half
1 apple, cored and chopped
2 medium sized red bell pepper, grilled partially, chopped
1 medium sized cucumber, cored and chopped

For the dressing:
½ cup mayonnaise
¼ cup vegetable oil
¼ tsp ground black pepper
¼ tsp salt
2 tbsp apple cider vinegar
1 tbsp brown sugar
¼ cup mango puree

Here’s how to do it:
Rub breast fillet with black pepper and salt. In a saucepan, boil breast fillet in pineapple juice until tender. Remove from the breast fillet and let it cool and chop into bite size. In the same pan, drop in half-cooked potatoes and continue heating until cooked.

For the dressing:
In a glass, put all the ingredients, cover tightly and shake until thoroughly mixed.

In a bowl, toss all the ingredients with the prepared dressing and serve.

  1. Simple ingredients. Quick to do. I will try the dressing, too. We usually do the cream+mayo+condensed milk combo.
