Custaroons Recipe


Custaroons is derived from the word custard and macaroons. It is actually macaroons but has a taste of custard or leche flan.

I was actually planning to share this recipe before the holiday season. Because of busy schedule, ngayon ko lang na-post.

These custaroons, together with the mason jars, were made as presents our colleagues at work.

This sweet treat is good if you are counting the calories. I used Sugar Blend in this recipe. Sugar Blend gives the same level of sweetness but half the calories.

CUSTAROONS
Ingredients:
400 grams desicated coconut
1 cup all-purpose flour
1 can sweetened condensed milk
1 cup butter, softened
1 cup Sugar Blend
4 large eggs
1 tbsp vanilla extract

Directions:
Preheat oven at 175ÂșC.

Using hand mixer at medium speed, cream butter and Sugar Blend until fluffy.
Add egg one at a time with mixing after every addition.
Add condensed milk and vanilla extract.
Mix until well-blended.
Set aside.

In a separate bowl, mix flour and desiccated coconut.

Fold into the egg-milk-butter mixture.
Mix well.

Line small muffin pan with a cupcake liner.
Put about 1 tablespoon of the prepared mixture.

Bake for 15-20 minutes or until top becomes golden brown.
Cool and serve.
