Bopis is a traditional Filipino dish made up of pork or beef lungs and heart sautéed in tomatoes, chilies and onions. This appetizing dish is also classified as pulutan and served with alcoholic drinks.
I personally don't like Bopis that much because it is cooked from pig internal parts, but it tasted good though. So I made a simple recipe I called Vegan Bopis.
This Vegan Bopis is made up of just 5 main ingredients - tokwa, carrot, radish, onion and bell pepper.
I just add spices like soy sauce, vinegar, salt and pepper to taste and little tomato sauce to add that vibrant color.
This Vegan Bopis is easy to cook and it tasted just like the original Bopis recipe.
Here is my Vegan Bopis recipe:
Ingredients:
4 squares tokwa, fried and diced
1 carrot, diced
1 radish, diced
1 bell pepper, dices
1 bulb onion, chopped
2 cloves garlic, minced
2 tablespoons vinegar
1 tablespoon soy sauce
2 tablespoons tomato sauce
ground pepper and salt to taste
vegetable cooking oil
Cooking Instruction:
1. Saute’ garlic and onion.
2. Add radish and carrots. Mix thoroughly.
3. Add diced tokwa and bell pepper.
4. Season with ground pepper, soy sauce and add salt to taste.
5. Add tomato sauce and vinegar. Continue mixing until cooked.
Ready to serve hot with rice.
