Pansit with Togue and Mani

In every birthday celebration, pancit is always present. Pampahaba daw ng buhay. So I want to share another way to cook pancit. I included additional ingredients. First is peanuts (Bechay lang ang peg). I got this from the teleserye "Got to Believe". I also added another veggie –the togue or mung bean sprouts.
Ingredients: cabbage, Baguio beans, peanuts, togue and carrots

You will need:
¼ kilo pancit bihon or sotanghon (vermicelli)
1 piece medium sized-carrot, stripped
2 cups shredded cabbage
2 cups Baguio beans, sliced thinly
1 medium sized onion, minced
4 cloves garlic, minced
½ cup celery, chopped
2 cups togue or mung bean sprouts
1 cup peanut, coarsely ground
½ cup soy sauce
¼ cup oyster sauce
1-2 tbsps ground pepper
1 liter chicken stock or 1 liter of water dissolved with 2 chicken cubes

Here’s how to do it:
In a wok, pour chicken stock, soy sauce, oyster sauce and ground pepper. Bring to rolling boil then add the bihon or sotanghon and celery. Simmer until cooked. Set aside.

In the same wok, saute onion and garlic. Add the rest of the vegetables and peanut. Stri-fry until veggies are cooked. Season with salt and pepper. Pour over prepared noodles and serve.

  2. I remembered a similar dish of noodles from my aunt. They cook pansit with peanuts and it tastes good. I love tenga ng daga with pansit too.
