Simple and Easy Potato-Cheese Croquettes

It’s been a while since the last time I shared a recipe in this blog. The actual reason is: I don't have any new dish or baked goodies made over the past weeks.

Last Friday, during the holiday, Bulacan province only, I made several and I am glad to share some of those.

First in the list is a very simple potato-cheese croquettes. If someone loves potatoes but already bored with the usual French fries, baked or potato salad, this can be a good option.


Potato-Cheese Croquettes with Mayo-catsup Dip

POTATO-CHEESE CROQUETTES

You will need:
1 cup potato, peeled and grated
1 cup grated cheese
Bread crumbs for coating
Oil for deep frying

Here’s how to do it:
1. Mix cheese and potato in a bowl.
2. Form into balls of about 1 inch diameter.
3. Roll in bread crumbs.
4. Deep fry until golden brown.
5. Place in a paper towel to remove excess oil.
6. Serve with a dip of your choice. I used mayonnaise-catsup dip.
