Lengua de Gato

Lengua de Gato

When I heard about Lengua de Gato, I thought this came from the word "lengua" or tongue and "gato" means milk or gatas because it tastes like milk. But I was wrong.  The word "gato" actually means cat and milk is not in the ingredients. This is named lengua de gato because its shape ressembles a cat's tongue.

During our Holy Week staycation, I baked some pieces.

After baking and transferring to wire rack, the finished product is very soft and malleable. This is very far from the expected. But after few minutes, it became crispy. Success!

Matt loves the taste that he keeps on going back to the kitchen asking for another piece.

LENGUA DE GATO

Ingredients:
3 egg whites
2 cups all-purpose flour, sifted
2/3 cups butter, softened
1 cup white sugar
1 tsp vanilla
½ tsp salt

Directions:
1. Pre-heat oven to 180ÂșC.
2. Line baking tray with greased parchment paper. Set aside.
3. Beat butter until fluffy.
4. Add sugar and mix until well-blended. Mix for another 2 minutes.
5. Add egg whites gradually.
6. Add vanilla and salt, and continue mixing for about 5 minutes.
7. Sprinkle all purpose flour and fold until no more lumps are seen in the batter.
8. Place in a piping bag with round tip and pipe about 2.5-3 inches long with about 1 inch gap with each other.
9. Bake for 10-12 minutes.
10. Remove from oven and let it cool in a wire rack.
11. Place in an air-tight container.
