Lugaw or rice congee is my son's favorite food. I don't know why but he simply likes eating lugaw with egg, penoy or crispy chicken wings.
It's his comfort food so I make it a point to cook lugaw for our breakfast or dinner. Now, let me share to you our Lugaw with Egg Recipe.
Ingredients:
1 cup long grain white rice
2 tbsp cooking oil
4 cloves garlic, minced
1 piece small onion, finely chopped
1 piece thumb-size ginger, finely chopped
1 tsp turmeric powder
1/4 tsp ground pepper
1 piece Knorr chicken cubes
4-5 cups of water
fish sauce or salt to taste
For Garnishing
4 pcs hard boiled eggs
toasted garlic
chopped spring onions
ground pepper
calamansi
Cooking Instructions:
1. Saute garlic, ginger and onion in oil. Add rice and saute for 5 minutes.
2. Add chicken cubes, ground pepper and turmeric powder.
3. Pour water and simmer for 30 minutes with constant stirring.
3. Add fish sauce or salt to taste. Simmer for another 5 minutes in low heat.
4. Transfer in a serving bowl and top with egg and garnish with toasted garlic, chopped spring onions, and ground pepper.
