Sinampalukang Manok



I noticed that my “mini” sampaloc tree has bunch or talbos (young leaves) so I collected them and used to cook one of my favorites, Sinampalukang Manok.

You will need:
½ kilo chicken
String beans, cut into about 2-3 inches long
Talbos ng sampaloc
Thumb-sized ginger, minced
1 onion, chopped
4 cloves garlic, minced
2-3 pieces siling pansigang
Salt to taste

Here’s how to do it:
Saute onion, garlic, ginger. Add the chicken and saute until rendered. Add 4-5 cups of water and let it boil. Drop in string beans and simmer until cooked. Add talbos ng sampaloc and siling pansigang. Simmer for another minute and serve. Adjust the taste using salt. You may also add tamarind extract for added sour taste.
