Going back to our hometown is really nice. One of
our goals is to purchase veggies in the market since there is a great
difference in terms of price. But what it is nicer to have veggies for free
courtesy of other relatives.
Last week, we gather enough veggies good for our
two weeks menu and one of them is upo (gourd). Mommy told me that she saw in TV
some recipes that can be made using upo and one of them is the rellenong upo or
stuffed upo.
Here’s my version:
You will need:
1 medium sized upo, peeled and cored. Core chopped
and set aside
¼ kilo ground pork
1 medium-sized carrots, chopped
1 large-sized potato, chopped
1 bell pepper, chopped
1 onion minced
1 cup all-purpose flour
2 eggs
Bread crumbs
Oil for frying.
Here’s how to do it:
Sauté onion and ground pork then add carrots,
potato, bell pepper and gourd. Season with salt pepper according to your
preference. Remove from heat and let it cool.
Add flour and one (1) egg and mix thoroughly.
Fill the gourd with the prepared stuffing.
Slice into about ½ inch think. Dredge in eggs and
bread crumbs before frying until golden brown. Serve with catsup.
