Oreo and Mango Cheesecakes

Cheesecake is one of our menu in our 6th anniversary. I made a No-bake Oreo Cheesecake. You can check the recipe on Momaye's Diary. Instead of using fruits as toppings, I used crushed Oreo cookies for this one.
No-bake Oreo Cheesecake

During our weekly meeting at work, one of my colleagues brought a baked mango cheesecake. Since medyo nabitin ako, I asked mommy is she wants me to bake a mango cheesecake. Of course, she cannot resist kapag mangga na ang pinaguusapan. This time, the filling was baked.

A Slice of Mango Cheesecake

MANGO CHEESECAKE

You will need:
For the crust:
2 cups Graham Crackers, crushed
1 cup butter
¼ cup white sugar
2 tsp cinnamon powder

For the Filling:
1 bar Cream Cheese, softened
1 cup sour cream
3 large eggs
½ cup white sugar
2 tsp vanilla extract
1 tsp salt

For the mango topping:
2 large ripe mango, chopped
½ cup sugar
½ cup water

Here’s how to do it:
Prepare the toppings first: In a sauce pan, put all the ingredients and place over low to medium heat until sauce thickens and started to caramelized. Cool and set aside.

Prepare the crust next: Preheat the oven to 175ÂșC. Melt the butter in a pan together with sugar and cinnamon powder. After the sugar has been melted, remove from heat and add crushed graham crackers. Mix thoroughly. Pack the Graham mixture in the mold (Since I don't have spring form pan yet, I used the Pizza Pan). Place in preheated oven for about 5-10 minutes.

Prepare the filling: In a bowl, put the softened cream cheese and sugar and mix in a medium speed. Add eggs one at a time and continue mixing. Add sour cream, vanilla extract and salt and mix thoroughly.

After baking the crust, pour in the filling and bake for about 20-30 minutes. Cool at room temperature. Place on top the prepared mango toppings and cool in the fridge for at least 4-6 hours before serving.

Tip/s:
Do not spend too much on buying prepared sour cream. You can make on your own. Just add 1 tbsp vinegar in 1 cup of all purpose or regular cream.

  2. I personally prefer baked cheesecake over the no-bake kind. But then agian, whatever it is, basta cheesecake I'll take it hehe. :) Nice to see that your oven is going to good use!
