Pork Igado



Igado is one of the popular Ilocano dishes consists of pork meat and innards like kidney liver and even heart. There are many ways of cooking this dish and here is my own version.

You will need:
250 grams pork, cut into strips
250 grams pork liver, cut into strips
2 pieces pork kidney, cut into strips
1 medium-sized carrot, cut into strips
1 medium-sized red bell pepper, cut into strips
1 small can green peas

1 medium-sized onion, minced
Dash of ground pepper
2-3 pieces laurel leaves
6 tsps. soy sauce
3 tsps vinegar
2 cups water

Here’s how to do it:
Sauté onions until translucent then add lean meat, liver and kidney. Stir-fry until meat becomes light brown. Add soy sauce, pepper and water and simmer for about 2-3 minutes. Add vinegar and drop in the veggies including laurel leaves. Simmer for another 2-3 minutes until sauce thickens.

Tip/s:

Since this dish includes pork innards (liver and kidney), you need to clean them thoroughly before slicing..
