I used to prepare this using mixture of condensed milk and all-purpose cream as filling. This time, I tried using alternative - custard filling. I made this as part of our Noche Buena last Christmas.
You will need:
1 pack
Graham Crackers
2 cups
fruit cocktail, drained, syrup reserved
2 ½ cups
evaporated millk
½ cup sugar
3 egg
yollks, slightly beaten
¼ cup
cornstarch dissolved in ¼ cup water
Here’s how
to do it:
For the custard filling:
In a
saucepan mix evaporated milk and sugar. Bring to boil with constant stirring
and lower the heat once started to boil. With continuous stirring, slowly add
the cornstarch mixture until thickens. Remove from heat then little by little
and with continuous stirring, slowly egg yolks. Return to heat and continue
stirring for a minute. Set aside and cool.
Dip Graham
crackers in fruit cocktail syrup and lay over a rectangular pan. Spread evenly
one-third of the prepared filling. Add half of the fruit cocktail then top with
another layer of graham crackers. Repeat the step one more time. Spread the
remaining filling over the top and chill for about 15 minutes.
Boil 1-2
cups of water then add the dissolved gulaman and simmer with continuous
stirring until thickens. Pour over the chilled crema to about ¼ inch thick and
chill again before serving.
Yummy! This makes me miss my cousin's crema de fruta!

ReplyDeleteThe steps are similar with the mango float recipe. Although I prefer the mango float, this is a good alternative especially when you live in Manila where mangoes (well fruits, in general) are expensive.
