An Ilocano dish composed of mixture of vegetables commonly heard in the Filipino song “Bahay-kubo” cooked in fish sauce (fish bagoong). The flavor is enhanced by adding either rendered pork liempo or fried fish. There are different ways of cooking this dish depending on the regions.

You will need:
Here are the basic ingredients in cooking this dish
1 pc Amplaya, long variety, seeded or 5 pieces small variety, cut into 4
2 pieces eggplant, long variety, cut into three portions then into half lengthwise or 5 pieces round variety cut into 4
1 bundle (about 10 pieces) string beans
2 pcs medium sized-kamote
6 pieces medium-sized tomatoes, sliced
6 pieces okra
¼ cup fish bagoong
Fried fish, tinapa, or pork liempo

Optional ingredients:
Malunnggay fruit
Siling pangsigang
Onions, quartered or spring onions cut into two
Patani seeds,
Veggies you want to add (try to check the veggies in Bahay-Kubo and you can add them too)

Here’s how to do it:
Render pork liempo until crispy. Add tomatoes and fish bagoong and saute until tomatoes are cooked. Add 2 cups of water and fried fish, if you opt for this one. Let it boil. Add the remaining veggies except for the onion. Simmer until all veggies are cooked. Add the onions. Remove the cover and keep on simmering for about 5 minutes.
