Bibingkang Kalamay: An Experiment

Have you ever experience cooking something but turned out to be another dish? Here is one of my experience and will definitely agree that cooking is really an adventure.

I was supposed to make Mommy’s favorite kakanin sold every Sunday in the market – bibingkang galapong. With accidentally switch the quantity of rice flour and conrstarch it turned to bibingkang kalamay. This also gave me an idea on how to make sapin-sapin.

You will need:
3 cup glutinous rice flour
1 cup cornstarch
6 cups coconut milk
1 cup sugar
1 tbsp vanilla extract or lime rind

For the topping you may refer to my recipe of Bibingkang Kanin.

Here’s how to do it:
In an iron cast pan, mix all the ingredients and stir until dissolved. Over low heat, place the mixture and stir continuously until thicken and no more mixture sticks on the other end of a wooden ladle. 
Glutinous Rice Mixture
Place the mixture in a greased pan and flatten the top. Pour over the prepared toppings and cook the same as the Bibingkang Kanin. Enjoy either hot or cold.
