Sinigang na Ulo sa Miso

Sinigang na Ulo ng Maya-maya
I love doing this dish using maya-maya. The head is really flavorful with lots of fats. Don’t worry,  it is healthy and a good source of Omega-3 fatty acids - good for the heart.
You will need:
½ kilo maya-maya head, chopped into serving size
1 cup miso (miso?)
2 pieces tomatoes, sliced into 8 pieces
1 medium sized onion, sliced
1 thumb-size ginger, sliced
1 bundle mustasa (mustard greens)
3 pieces siling pangsigang
1 pack Tamarind soup-base mix
Patis

Here what to do:
In a pot, place onion, ginger and tomato. Add  about 4 cups of water and bring to boil. Add it fish and miso paste and simmer until fish is cooked. Add mustasa, sili and tamarind soup-base mix. Simmer for another minute before adding patis. Adjust according to your taste.
