Chicken Kaldereta


Are you already bored with the usual dish out of chicken? Here is another suggestion. Why not try preparing Chicken Kaldereta? I am glad to share my version of the said dish.

You will need:
½ kilo chicken, adobo cut
2-3 pieces potato peeled and cut into 8 pieces

1 carrot cut the same size as potatoes
1 red bell pepper
1 green bell pepper
½ cup tomato sauce
1 cup evaporated milk or coconut milk
¼ cup all purpose cream
Onion and garlic
1 laurel leaf
¼ cup grated cheese.
Salt and pepper to taste

Here’s how to do it:
Stir fry potato, carrot and bell peppers separately. Set aside

Sauté onion, garlic and chicken until chicken were rendered. Bring back the veggies. Add laurel leaf and tomato sauce. Add about ½ cup of water. Simmer then add evaporated milk and all-purpose cream and cheese. Simmer at lowest heat possible for about 5 minutes. Add salt and pepper to taste.

Best serve with steamed rice.

Tip/s:
Stir frying veggies first will prevent them becoming soggy when cooked.
Cooking using lowest heat possible will prevent milk and cream forming of forth.
You can add 1 small can of liver spread for added flavor.
