Crispy Chicken Wings and Spaghetti

Crispy Chicken Wings

For the breading:
1/2 kilo chicken wings
1/2 cup cornstarch
1/2 cup all-purpose flour
2 teaspoon ground pepper
2 teaspoon salt

For the gravy:
2 tbsp butter or margarine
2 tbsp cooking oil
2 tbsp flour
1 cup chicken stock or half chicken cubes
1 tsp soy sauce
1 laurel leaf
1 tsp ground pepper

Cooking Instructions:

Pat-dry your chicken.
In a large container which can be sealed, place all the ingredients and mix thoroughly. If you can have a large zip lock bag, better. Place the chicken and continue mixing until all the chicken has been covered with the breading. Deep fry in preheated oil until golden brown. Drain excess oil and serve with gravy.

For the gravy:
Heat cooking oil and margarine or butter until melted. Add flour until become paste. Add chicken stock and simmer while whisking. Add soy sauce, pepper and laurel leaf. Simmer for another minute.

Saucy Spaghetti
Spaghetti is just easy to do. So I will just give some tips regarding cooking this meal.

If your are not cooking this after buying in the market, just pat dry before storing in the freezer so you can fry it directly without thawing first. This will yield a juicy but crispy chicken.

If you wan to make it more crispy, place a piece of ice cube or 1 tbsp water and cover it just before the chicken cooks.

For the gravy:
Never place the flour after adding water for this will result into lumps. If you think your gravy does not thicken the way you want, just dissolve 1 tsp cornstarch in 1 tsp water and add it in your gravy to thicken it.

Better to rub the laurel (dried basil leaf) between your fingers before adding to the gravy mixture to release more flavor.

For the spaghetti:
Use enough water and large pot in cooking your pasta.
Do not place oil in the water for this will prevent sauce from adhering the pasta.
Heat up and bring the water to boil immediately after adding the pasta.
Drain your pasta prematurely. Don't follow the exact time of cooking in the labels. The heat is enough to further cook your pasta even without water.
Do not wash or rinse your pasta in water for this will wash out the starches and nutriets in it.
You can only check if the pasta is already cooked if you take a bite from it.
Set aside about a cup of the pasta water and add or use this to your sauce to make it more saucy and coats your pasta. It also adds some flavor.
Cook your sauce a bit salty. Don't worried about the saltiness, it will be balanced when added to the pasta.
If you are adding hotdogs or sausage to your sauce, saute it instead of adding it in the end.
