Pancit Canton |
Here
is another variety of pancit – Pancit Canton or egg noodles.
You will need:
For the veggies:
Just
like the Sotanghon Guisado but remove the quail eggs and replace with kikiam
and chicken or squid balls. Also, I add chickpea or chicharo as one of the
veggies.
For
the noodles:
½
kilo Pancit canton noodles
4-6
cups of water
15ml
oyster sauce
2
chicken or shrimp cubes
1
tbsp. soy sauce
Dash
of ground pepper
Here’s
how to do it:
Stir-fry
the veggies like in Sotanghon Guisado.
In
the same pan, put all the ingredients except for the noodles and celery. Bring
to rolling boil. Add noodles and celery and keep on stirring until noodles are
cooked. If noodles are not yet done and you think it is starting to stick on
the pan, add another cup of water.
For
saucy noodles, just add 1tbsp cornstarch dissolved in 1 cup water.
Serve topped with shredded scrambled eggs.
